Fruit & Vegetable Powder Plant

A fruit or vegetable powder is made either by drying a liquid feed, such as a juice or a concentrate, or by drying prepared produce and then milling it. Mechotech lists spray dryers, freeze dryers and vacuum dryers that convert liquids, concentrates and wet solids into powder. A standalone raw-produce powder line, with washing, cutting, drying, milling, sieving and packing, is scoped per project because it is not a listed standard product.

For liquid feeds the spray dryer atomises the feed into hot air and recovers dry powder through a cyclone and bag filter, with the atomizer chosen to the feed's viscosity and target particle size. Where heat-sensitive colour, aroma or structure must be preserved, the freeze dryer dries a pre-frozen product under deep vacuum, and the vacuum paddle dryer handles wet solids and pastes at lower temperature. Sugar-rich fruit feeds are sticky, so carrier or drying aids and trial work are normally part of the design. For a route from fresh produce, preparation, dehydration, milling, sieving, blending and packing are engineered around the specific crop, moisture target and capacity. Final configuration depends on raw material, process requirements, capacity and engineering review.

Manufacturing Process

1

Feed Preparation

The fruit or vegetable is prepared into the feed the dryer needs: a clarified juice, a concentrate, a puree, or prepared pieces. Preparation steps are scoped per project.

2

Concentration (Optional)

A falling-film or multiple-effect evaporator can raise the solids of a juice before drying, which reduces the water the dryer must remove.

3

Carrier or Drying Aid (Where Needed)

Sticky, low-glass-transition feeds may need a carrier or drying aid to form a free-flowing powder. Selection is made during trials.

4

Drying

Liquids are spray dried, heat-sensitive products are freeze dried, and wet solids and pastes are dried under vacuum, according to the feed and target powder.

5

Milling & Sieving (Where Required)

Where the route starts from dried produce, the dried material is milled and sieved to the target particle size. This stage is scoped per project.

6

Blending, Packing & Cleaning

Powder is blended and packed under conditions that suit its moisture and shelf life, and product-contact parts are cleaned in place between runs.

Major Plant Equipment

  • Spray dryer with atomizer, cyclone and bag filter
  • Freeze dryer (lyophilizer) with refrigerated condenser
  • Vacuum paddle dryer
  • Fluidised-bed dryer
  • Falling-film or multiple-effect evaporator (pre-concentration)
  • Feed tank with agitator and feed pump
  • Sieve / sifter for oversize removal
  • CIP (clean-in-place) system
  • PLC-based control panel and instrumentation

Plant Output

Spray-dried fruit or vegetable powderFreeze-dried powder or piecesDried granules or powder from the vacuum and fluidised-bed dryers

Applications

  • Fruit juice and concentrate to powder conversion
  • Vegetable and fruit puree drying
  • Instant beverage and food powder manufacturing
  • Botanical and herbal extract powders
  • Heat-sensitive ingredient drying by freeze drying
  • Process development and pilot drying trials

Key Features

  • Dryer Matched to the Feed

Spray, freeze and vacuum drying are each listed, so the dryer is chosen from the feed's heat sensitivity, stickiness and target powder.

  • Trial-Led Design

Atomizer, carrier and temperature settings are established on your feed in pilot trials, not assumed.

  • Concentration Ahead of Drying

Evaporators can pre-concentrate a juice so the dryer handles less water.

  • Clear Scope Boundaries

We separate the listed drying equipment from the fresh-produce front end, which is scoped per project.

Frequently Asked Questions

Does Mechotech supply a complete fruit and vegetable powder plant?
We list the drying equipment that converts liquids, concentrates and wet solids into powder. A complete raw-produce line, with washing, cutting, drying, milling, sieving and packing, is not a listed standard product and is scoped per project after engineering review of your produce, moisture target and capacity.
Which dryer is used for fruit powder?
A liquid juice or concentrate is typically fed to the spray dryer, heat-sensitive products to the freeze dryer, and wet solids or pastes to the vacuum paddle dryer. The choice depends on the feed's heat sensitivity and stickiness and is confirmed on a trial.
Why do fruit powders need a carrier?
Sugar-rich fruit feeds are sticky when dried and can form a paste on the dryer wall. Carrier or drying aids help form a free-flowing powder. Whether one is needed, and which, is established in trials on your feed.
Can I start from fresh fruit or vegetables?
Yes, but the route from fresh produce depends on the crop. Our guide to fruit and vegetable dehydration plants sets out the preparation, drying and milling stages, and the scope is defined in the proposal.
What information do you need to size a powder plant?
Share the fruit or vegetable, the feed form and solids content, the target powder moisture and particle size, whether a carrier is acceptable, the capacity and the utilities available at site. A pilot trial on your feed is recommended before full-scale sizing.
Can the powder be produced from a juice concentrate?
Yes, where the concentrate suits the dryer. An evaporator such as the falling-film evaporator can raise the solids first; see also our fruit juice processing and concentration page.
